It’s not like I’ve not made anything; I make EVERYTHING😅. It’s just a matter of finding time to talk about it. Speaking of…

These days, mornings typically consist of a green smoothie, eggs🍳, keto bread🍞, paleo baked goods, yogurt parfait, or fasting (when I’m not nursing!).

But this time, I wanted to really amp it up! Make it saucy💃, add some spice, be creative! And that’s just what I did.

Trust me, if I could have sweet breakfasts for the rest of my life, I would🤯. However, variety is important. Though if I eat eggs, it needs to have something extra. Herbs and spices, cheese, veggies🧅🧄 … And cooked either sunny-side up or poached.

I’m not trying to be ‘snobbish’. Rather, I’m a culinary artist and my plate is my canvas. Also, the more I add to my dish, the better I feel. (Of course, I won’t turn down a simple caprese🍅🧀 salad. It just depends; not every dish of mine is gourmet.)

So the end result? Eggs benedict atop a bed of cooked kale, covered with raw, melted cheddar cheese🧀(vegan is an option), hollandaise sauce, and fresh chives from the garden. The fact that the eggs were poached truly enhanced the flavor and mouthfeel of the dish. If you ever try to poach an egg, use vinegar🙏! I think it better stabilizes the egg, rather than forming egg drop soup … Or eggy water (yuck!)

The hollandaise sauce was actually really simple!
– 3 egg yolks
– 1 cup butter (or ghee). Kerrygold is the BEST butter on the shelves.
– 1 Tbsp lemon juice
– Salt to taste
– (Optional): black pepper, herbs like thyme, spices like cumin


You blend the egg yolks🥚 in with the lemon juice and slowly add the melted butter, so as not to cook the eggs. Then blend in any add-ins and serve immediately☝. I waited too long and then reheated it and it looked like cheese curds. Mistakes happen; trial and error!
