How often I have walked past a Chinese buffet and wanted to walk right in via the aromatic path wafting my wayđ€€.
But, I donât; I cannot eat what they dish out. I mean, I can, but then I would not feel greatđ€ą and I know many of us struggle with that.
Food is good, but thereâs still indulgence in flavor without the costđŻ.
As Iâve walked this new lifestyle, Iâve learned that there are many ways to enjoy what we would like to. We always choose the conventional, common path, not because itâs the easiest, but itâs the best known and perhaps better practised.
âThat is so not me; I will find a different way around the situation to get the results I am looking for.
However, I do have a passion for food. As many of you already know, I love to grow my own vegetablesđ„Źđ„đ and herbs, shop at all the markets and websites to get the best deals, research the nitty-gritty about the macro and micro components that make up a food, create my own recipes, have dinner parties, etc.
I love a challenge, honestly. (Just not the challenge of pain or suffering. Itâs instructive, but difficult).
So one of my challenges was to create a mouth-watering, savory, satisfying Asian stir-fryđ„, without compromising clean food choices. And so I discovered how to do it. Do you know my secret with all of these recipesđ? I research a lot of different recipes and blogs and then create my own recipe. Basically, I pull what is useful and put it all together. So here goes:
Ingredients
â 1 lb ground beefđ„©
â 1 small head red cabbage
â 1 medium onionđ§
â 3 cloves garlic
â 1 bag of brussel sprouts
â 1 pint of cherry tomatoesđ
â 2-3 tsp fish sauce (start with less, as this can be too fishy for some)
â 2 Tbsp coconut aminosđ„„
â 3 Tbsp sesame seed oil
â 1 Tbsp garlic powderđ§
â Salt and pepper to taste
â Optional add-ins: sesame seeds, broccoliđ„Š, fresh rosemary, fresh thyme, fresh chives, fresh basil
Instructions
1. Cook ground beef in a skillet until thoroughly done.
2. Chop onion and cabbage, mince garlic, and halve brussel sprouts, and cherry tomatoes.
3. Remove meat from skillet, with grease kept in skillet.
4. Add onion, cabbage, and brussel sprouts to cook (covered).
5. Once vegetables are soft, add garlic and tomatoes.
6. Once everything is cooked to your liking, add the ground beef back in with the seasonings, fish sauce, sesame seed oil, and coconut aminos.
7. Serve hot! Remember that you can amp up the flavor with any of the optional add-ins.đ„Ł
Why red cabbage? What about green cabbage?
Both of them are good, but given the choice? Iâll let you decide.
â€Red cabbage has a higher concentration of vitamin C, 10 times more vitamin A, 2x more iron, and the antioxidant anthocyanin. đHowever, green cabbage contains about 2x as much vitamin K.
